If you are limited in space or are just getting started, an herb I recommend is "Italian Large Leaf Basil".
Pinch off large or damaged leaves when you bring it home and use or discard those leaves. The pinching off will encourage the growth of new leaves. I also recommend transplanting the potted plant into a larger container or the ground to keep your plant happy.

I've got a basil plant too and I made a nice snack this week. It was like a pesto bread dip.
I put few basil leaves, extra virgin olive oil, garlic and cayenne pepper in my blender/food processor. Then toasted a piece of bread that was about to go bad. Then just dipped the bread in the pesto oil dip. It was tasty and felt good not wasting the last of the bread.
That sounds tasty and easy...I'm going to be passing that recipe along!
